Tamales

Tamales originated in mesoamerica between 800 and 500 before the common era, and were a very important part of the diet of the maya and the mexica.

Fray Bernardino de Sahagún describes some varieties of tamales in his ‘General History of the things of New Spain’ in the SIXTEENTH century. He and other authors make reference to the tamal not only as a food of the common people, but of nobles and priests in special ceremonies.
